Bad Mama green curry chicken with sticky rice

Recipe for 4 people

Preparation time: 20 mins

Cooking time: 40 mins / Leave the sticky rice to soak overnight

Musique to cook with:  Low Tide by Neung Phak



*500g of Sticky Thai rice or Thai jasmine rice
*750g of Organic free range chicken
*2 tins of Coconut milk or 200g of Coconut cream with 750cl of water
*2 Table spoon of Thai green curry paste
*1 fresh lemon grass stem
*4 small eggplant
*1/2 cup of Black fungus
*1 Tea spoon of sea salt
*8 Mint leaves
*1 to 2 teaspoon of Bad Mama Hive


Put your speakers on, play the music then,
Reduce 3/4 of the coconut milk in a large pot, add the curry past stirring over medium heat until all absorption, add the chicken and stir with 
the mixture, let it simmer for 15 mins until the chicken is mostly cooked,
Soak the black fungus in hot water in separate bowl,
Add the eggplants (cut in quarters), salt, lemon grass (cut in 3 parts)
Pour the rest of the coconut milk in the pot, turn the heat to low then add the black fungus (previously drained), add the Bad Mama Hive to taste,
let it simmer for 20 mins

Sticky Thai rice

Drained the rice, dispose it in a steamer (ideally a bamboo steamer basket), steam the rice till cooked then serve with the chicken, add 2 leaves
of mint

et Voila !

PS: If not hot enough adjust with Bad Mama Hive
